Keisuke Fujiya

Born in Hokkaido in 1983 and a graduate of Tokyo Hattori Nutrition College, he honed his skills in France at renowned establishments, including Alain Senderens. Upon returning to Hokkaido, he quickly rose through the ranks, serving as Sous Chef at "Banquet" before becoming Head Chef at both "Côte d'Or" and "obtenir K", where his work earned critical acclaim from Michelin and Gault & Millau. Now the Chef at SIMOSE French Restaurant since June 2025, he builds upon a foundation of classic French cuisine. His philosophy is to pursue both lightness and depth, incorporating Setouchi ingredients into aromatic dishes that skillfully utilize spices and liqueurs, while prioritizing meticulous cooking temperatures and rich sauces to achieve profound flavor.

〇3rd Anniversary Special Course "Emile Gallé's Garden" - 13,500 JPY
The Art Nouveau aesthetic dwelling in the supreme artworks of Emile Gallé, a French artist who pursued the mysteries of the natural world, is expressed in French cuisine. The organic curves of flowers and plants, and Gallé's unique, poetic gradations, are combined to create an original course menu by Chef Keisuke Fujitani of SIMOSE French Restaurant, where you can experience the delicate expressions of glass as it shifts through the light. Enjoy a moment where nature and art resonate with each other, satisfying all five senses.
